WESTERN RECIPE


Nicoise Salad

Ingredients

2num               boiled potato
4-5 num           blanch French bean
2-3pcs              chiffonade iceberg lettuce
100gm             tuna chunks
50gm               black olive
2num               wedges boiled egg
2num               wedges tomato
50gm               chopped parsley
Tt                     seasoning

Cooking method:

1.      Sliced boiled potato into half cm and cut French bean into slant
2.      Arrange all ingredients in a plate.
3.      Serve salad with French dressing a la minute.
4.      Serve salad cold.


EASTERN RECIPE


Mango Salad
Ingredients

2num               green mango
30gm               sautéed dried shrimp
½ num             sliced ginger flower
1 num              sliced red chili
½ num             red onion
2tbsp                vinegar
20gm               pound roasted peanut
10gm               shredded coriander leave
2num               bird eye chili
1tsp                  fish sauce
1 ½ tsp             castor sugar
Tt                     salt
Tt                     white pepper powder

Cookig method:

  1.           Peel mango and thinly sliced.
  2.       Slice ginger flower, red chili and red onion.
  3.       Add all ingredients in a bowl.
  4.       Season with salt and white pepper powder.
  5.       Adjust flavoring with castor sugar.
