Grilled Ternderloin accompanied with Black pepper Sauce and Jacket Potato

WESTERN RECIPE

Grilled Tenderloin accompanied with Black pepper sauces 
and Jacket Potato

Grilled Tenderloin

200 gm            Tenderloin steak
Tt                     Salt, crashed Black pepper
1 clove             Chopped Garlic
1 tsp                Mustard, Paprika Powder
4 tbsp              Oil
100 ml             Water

How to make Grilled Tenderloin:

1.         Combine chopped garlic, mustard, crushed black pepper and salt in an oil.
2.         Soak tenderloin in the mixture, and let it marinated for about 30 minutes.
3.         Grill the sirloin on the both sides to the desire doneness.
4.         Plate the sirloin on plate and serve with black pepper sauce together with selected sauté vegetables and jacket potato.

Blackpepper sauce

15 gm              Butter
30 gm              Crushed black pepper
10 gm              chopped garlic
1 tbsp              instant demi-glance
Tt                     salt

How to make Blackpepper sauce:

1.         Heat up butter in a sauce pan.
2.         Add garlic, sauté until aroma is released.
3.         Add in crushed black pepper and sauté for few minutes.
4.         Add in demi glance and simmer for 10 minutes. Adjust the seasoning.

Jacket potato

1 num              Russet Potato
2 tbsp              Sour cream
10 gm              Chopped onion

How to make Jacket Potato:

1.         Rub potato with seasoning and a little oil.
2.         Wrap in aluminium foil and bake for about 30 minutes.
3.         Topped with a mixture of sour cream and chopped onion.


EASTERN RECIPE

Rendang Beef

Rendang Beef

1/2 Kg             beef
10 num            Shallot
4 cloves           Garlic
1 inch              Ginger
½ inch             Galangal         
3 num              Lemon Grass
1 tbps              Coriander powder
1 tsp                cumin powder
2 num              Cardamon
3 pcs                Lime leaf
500 ml             santan
1 pcs                Turmeric leaf
Pinch               beef curry powder, fried grated coconut, chilli blends
Tt                     Salt, sugar

How to make Rendang Beef:

1.         Heat up the oil in a pot and sauté the blends ingredients.
2.         Add in the blend dried chilli and curry powder and stir well.
3.         Put in the cubed beef, coconut milk and bring it to boil.
4.         Put in slices turmeric leaves and lime leaf.
5.         Turn the heat low and put in fried grated coconut and stir for a while until the rending thickens.
6.         Lastly, put in salt and sugar as needed, when the beef cooked, turn off the heat.
7.         Garnish rending with slices of turmeric leaf and slices of red chilli.
